Chipotle-Beer Braised Chicken Tacos

Chipotle-Beer Braised Chicken Tacos

Serves 4

  • 1 Tablespoon oil
  • 1 pound chicken thighs (boneless, skinless)
  • 2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • salt
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 3/4 cup dark ale
  • 3/4 cup diced tomatoes (fresh or from a can)
  • 2 Tablespoons minced chipotles in adobo
  • 2 teaspoons honey
  • 8 tortillas (flour or corn, warmed)
  • Garnish- cilantro, diced onion, crumbled cotija cheese, lime wedges

Season chicken with spices and salt. Heat the Dutch oven over medium high heat, Add the oil. Carefully place the chicken in the pan and cook until golden on one side.

Turn the chicken over. Add the shallots and garlic. Cook for 1 minute. Add the beer, tomatoes, honey and chipotles. Bring to a boil, reduce to a simmer and cook until the chicken is cooked through.

Remove the chicken from the pan. Let it cool slightly. When cool enough to handle, shred the meat with 2 forks or chop. Add the meat back to the pot. Taste and adjust seasoning.

Serve with warmed tortillas and garnishes.
