Gluten-Free Apple Crisp

Serves 6

Ingredients:

  • 4 cups apples, peeled & sliced (use a few varieties of apples for a more interesting flavor and texture)
  • 1 Tablespoon sugar
  • 1 teaspoon lemon juice or apple cider vinegar
  • 1 teaspoon cornstarch
  • 2 teaspoons ground cinnamon, divided
  • ¼ teaspoon ground cardamom
  • pinch nutmeg
  • pinch of salt
  • ½ cup almond flour
  • ½ cup certified gluten free old fashioned oats
  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • 4 Tablespoons softened unsalted butter
  1. Preheat the oven to 350º. Coat a pie plate or 8 x 8in square baking pan with cooking spray or grease with butter.
  2. In a large bowl, toss together the apples, sugar, lemon juice, cornstarch, 1 teaspoon cinnamon, cardamom, nutmeg and salt until well combined. Set aside.
  3. Make the oatmeal topping: In a bowl, gently combine: almond flour, oats, brown sugar, 1 teaspoons cinnamon, salt and butter until crumbly.
  4. Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned.
  5. Serve, hot, warm, or at room temperature with vanilla ice cream.
