Recipe for Ginger-Hoisin Glazed Pork Tenderloin

Ginger-Hoisin Glazed Pork Tenderloin
  • 2 Tablespoons minced fresh ginger
  • 3 cloves garlic, crushed
  • 3 green onions, chopped - reserve handful for final garnish
  • 1/3 cup lite soy sauce
  • 1/3 cup rice vinegar
  • 1 Tablespoons sesame oil
  • 2 Tablespoons hoisin
  • 1 1/2 Tablespoons Asian chile paste
  • 2 Tablespoons light brown sugar
  • 1 1/2 teaspoons pepper
  • 2 pounds pork tenderloin

Garnish: Chopped cilantro, Reserved green onion,Chopped peanuts, Lime wedges

Pour into a medium bowl the soy sauce, sesame oil, hoisin and rice vinegar. Then whisk in brown sugar, green onions, garlic, chili paste, and pepper. Place the tenderloin in a shallow dish. Pour sauce over tenderloin, turning the meat a few times to coat. Cover the dish, and refrigerate for at least 2 hours.

After marinating, transfer to a slow cooker. Cook on high for 3 hours

Transfer meat to the cutting board. Cover with foil and let stand 5 to 10 minutes before carving.

Transfer cooking liquid to bowl. Skim excess fat from the surface. Reheat.

Serve with rice and garnish with cooking liquid, cilantro, green onion, peanuts and a squeeze of lime
