Banana “Ice Cream” Sandwiches

Serves 6 (makes 18 sandwiches)

  • 4 ripe bananas, cut into pieces and frozen
  • ½ tsp vanilla
  • 36 Nila wafer cookies
  • 1C chocolate jimmies, or sprinkles

Place bananas and vanilla in a food processor, puree until smooth. Eat as soft serve or spread in a 9x9 pan, press saran wrap directly on the surface of the ice cream and place the pan in the freezer to freeze.

To assemble

Scoop one small scoop of the ice cream onto a Nila wafer, top with the another wafer. Roll the sides in sprinkles or jimmies. Eat, or place in the freezer to harden.
