Everyone loves Chef Manny. He’s the bomb ?. He’s a force in the kitchen, a well-rounded chef and individual. He’s forgotten more than most of us will ever learn. From breaking down sides of beef to teaching how to flip the best over-easy eggs of your life, he’s got you covered. Heck, he’s even been known to fill in to teach the random Minnesota “bar -s” class! Golfing, boating, cooking, organizing the Mancini’s booth at the Great Minnesota Get-Together — he’s a St. Paul institution, all by himself. What’s your favorite cuisine? American Regional Cuisine, specifically Cajun and Tex-Mex.
Which cookbook do you reach for the most often? The Pro Chef is the go-to for fundamental techniques and methods. But anything by Thomas Keller makes for good reading and makes you realize just how much you don't know. A bit over the top, but entertaining, if nothing else.
What’s your favorite gadget or kitchen tool? Bench knife and microplane.
Whose hand would you like to shake? Why? Wolfgang Puck. His work had a major affect on my early cooking style and passion. I got to meet Emeril, which was really cool. Great guy very funny!
French or Japanese? French, sorry. I guess I'm "old-school" or maybe just OLD! LOL
