For the sauce
Make an egg wash by whisking together the eggs and cream.
Dredge the bratwurst in flour and pat off excess. Lay the puff pastry on a cutting board and cut into a rectangle the length of the bratwurst and about 5 inches tall. Lay the bratwurst horizontally on the edge closest to you and egg wash the edge farthest from you. Roll the bratwurst up and set it so the seam is on the bottom.
Brush the tops of the wrapped bratwurst with egg wash and liberally sprinkle everything bagel seasoning on top.
With a very sharp knife, slice the roll into half inch slices and place them on a parchment lined sheet pan. Bake at 350 for 12 minutes or until golden and the brats are cooked through.
