Grilled Steak with Romesco Sauce

Grilled Steak with Romesco Sauce

Serves 6

Cooking the Steak

Ingredients 

  • 2 # steak (flank, hanger, & Tri-tip)
  • To taste kosher salt

Prepare a grill for medium-high heat; oil grate. Season steak on both sides with salt and pepper.

Grill steaks until charred and an instant-read thermometer inserted into the thickest part registers 120°, 3–4 minutes per side for medium-rare. Transfer to a cutting board and let rest for 10 minutes.

Slice steak against the grain into ¼"-thick strips. Arrange on a platter, serve with a sauce

Romesco Sauce

Makes 1 1/2 cups

Ingredients

  • 1 large roasted red bell pepper from a jar
  • 1 garlic clove, smashed
  • 1/2 cup slivered almonds, toasted
  • 1/4 cup tomato purée
  • 2 Tablespoons chopped flat-leaf parsley
  • 2 Tablespoons sherry vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup extra-virgin olive oil
  • Fine sea salt and freshly ground black pepper

Pulse first 8 ingredients in a food processor until very finely chopped. With the motor running, slowly add oil; process until smooth. Season with salt and pepper.
