Recipe: A Swedish Midsommar Celebration wrapped into a tasty sandwich!

For hundreds of years, Midsommar in Scandinavia has been a steadfast celebration of the arrival of the warmth of summer, amazingly green grass, blue skies and bright, sun filled skies. It is the summer solstice, it’s the longest day of the year and it’s a day for celebration.

Girls wear a crown of fresh picked wild flowers, a Maistang is raised in the yard and traditional music is queued up for the festivities. Helan Går when you raise a glass of Aquavit and Små Grodorna for dancing around the Maypole with the whole family in tow.

While dinner typically has a traditional theme - meatballs, a variety of herring, new potatoes and gravlax, I stumbled across a wonderful Smörgås, sandwich, many years ago - Skåne Matt. Served open faced,super quick, easy to assemble and all the beautiful early summer flavors wrapped into each and every bite!

Ingredients
  • Skin on new potatoes, boiled with fresh dill, cut into bite-sized pieces
  • Pickled Herring
  • Sour cream
  • Dark rye bread
  • Fresh chives, dill and crisp fried onions to garnish
Assembly
  • Start with a piece of rye bread. Put a schmere of sour cream on the bread and add few sprinklers of herbs
  • Layer with potatoes
  • Layer with herring
  • A few more dollops of sour cream
  • Another sprinkle of herbs
  • A final sprinkle of crisp onions
  • Serve with small glass of Scandinavian beer and shot of Aquavit… Skål!!

For dessert, a beautiful bowl of super ripe blueberries, served with sweet whip cream and a few mint leaves.
