Serves 4

  • 1 Tablespoon oil
  • 2 white onions, peeled and sliced
  • 1 Tablespoon butter
  • 1 pound beef stew meat cut into 1in cubes
  • 2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup flour
  • 2 Tablespoons sweet paprika
  • 1/4 teaspoon caraway seeds
  • 2 cups beef broth
  • 1 Tablespoon lemon juice
  • 1 lb. egg noodles, cooked
  • 1/2 cup sour cream (optional)
  • 4 Tablespoons chopped parsley (optional)

Heat a large braiser over medium high heat, add the oil. Add the sliced onions and cook until translucent. Push to one side of the pan or remove from the pan.

Season meat with salt, pepper, flour, paprika and caraway seeds. Add the butter to the pan, when melted add the meat in a single layer. Cook the meat until deeply brown on one side and then turn over. Cook as long as you can on the second side without burning the flour and spices.

Add about 1/2 cup of the broth to the pan, scraping the bottom of the pan. Gradually stir in the remaining broth. Bring to a low simmer and cover, cooking until the meat is tender and cooked through, about 90 minutes.

Stir in the lemon juice and taste, adjust seasoning with more salt and pepper. Serve over cooked egg noodles and garnish with a dollop of sour cream and a sprinkle of parsley.
