Serves 6

INGREDIENTS

  • 4 large eggs
  • ¾ cup all-purpose flour
  • ¾ cup whole milk
  • 1 Tablespoon sugar
  • Pinch of nutmeg
  • 2 teaspoons vanilla bean paste
  • 3 Tablespoons butter
  • Confectioners’ sugar and jam, for serving

ASSEMBLY

Heat oven to 425º F.

Combine eggs, flour, milk, sugar, nutmeg, and vanilla bean paste in a blender. Blend until just smooth.

Place butter in a 12-inch skillet and slip the skillet into the oven to melt the butter. Swirl the pan to distribute the melted butter and pour the batter into the pan. Return the pan to the oven and bake for 20 minutes. Turn off the oven heat and keep the pan in the oven for another 5 minutes.

Remove the skillet from the oven, spread Dutch Baby with jam or preserves and dust with confectioners’ sugar. Serve at once.
