It’s produced once a year in the fall, as the diet of their cows begins to change from summer pasture to winter’s dry hay. The extra-rich milk is perfect for a cheese like Rush Creek: soft, creamy and decadent. Each cheese is wrapped in spruce bark, giving it shape and also a subtle woodsy flavor.
