This Rosemary sheep milk cheese is lactic style & fresh, meaning it’s un-aged. It ripens and drains for 48 hours, after which it is mixed with dried herbs and salt and promptly packaged. It has a soft, delicate curd, crumbles well when cold and becomes more spreadable as it warms up. For people familiar with Fresh Chèvre, that is a good comparison; but without the gaminess sometimes associated with goat cheese.
