Sheep Cheese: Spicy Chili | April
by: Green Dirt Farm
This fresh sheep cheese is bright and lemony, with a clean milky note on the finish. Similar to fresh chèvre, but without the gaminess sometimes associated with goat cheese.
This cheese has a soft, delicate curd. It crumbles well when cold and becomes more spreadable as it warms up. This cheese is very versatile and can be used for a variety of dishes or simply served on a cheese plate or charcuterie board.
The spicy flavor of dried chilis in this cheese is the perfect partner to the tang! Use in any dish that calls for a touch of heat; scrambled eggs, smeared on toast tips and topped with honey, crumbled on salads, just about anything you can think of.
