Recipe: Prosciutto and Arugula Pizza

What's better than pizza? Grilled pizza! Elevate your pizza game this summer by taking it to the grill. 

Prosciutto and Arugula Pizza

  • 1 pizza dough
  • Extra virgin olive oil
  • 2 garlic cloves, peeled and cut on one side
  • 4 very thin slices of asiago cheese
  • 6 slices of prosciutto
  • 1 loose cup of arugula
  • 1 teaspoon lemon zest
  • Black pepper, freshly ground
  • Crushed red chili flakes

Clean your grill then using a paper towel dipped in olive oil, run the towel of the grill to coat it. Place the dough on the grill and grill each side for about 2-3 minutes or until grill marks appear and the dough looks dried and baked. Flip the dough and repeat on the other side.

Remove the grilled dough and immediately rub the garlic over the warm crust. Drizzle with olive oil. Lay the slices of asiago cheese on the grilled dough and return to the oven to the cooler part of the grill to melt the cheese. Once melted, remove from heat then top with arugula then slices of prosciutto. Arugula will wilt slightly which is good for this recipe. Sprinkle lemon zest and black pepper and/or crushed red chili flakes.

Serve warm.
