Marie makes the best fruit crisps. Admittedly, crisps are not difficult to whip up, but whatever Marie creates makes my head and heart swoon, and this isn’t limited to just crisps. I don’t even like sweets, but this warm heap of heaven in a bowl makes me dream of opening a cafe that only serves crisps. Notably, my dream, not Marie’s. Juicy, bubbly tart fruit baked under a blanket of crunchy cardamom and oat streusel topping, and served up with a scoop of ice cream and a few extra flakes of Maldon sea salt. When this is in the oven, I am never sure if we should eat dinner or just skip to dessert!
Mix above with your hands until crumbly but sticks together (looks like pea gravel). Sprinkle over fruit add a few extra pats of butter on top before putting into the oven.
Bake at 350º for 40 to 45 minutes, until it is bubbly and top is golden. Serve warm with ice cream.
